Spicy Couscous Salad

This Couscous is amazing. It is spicy, tasty and simply delicious. It can be eaten on its own or mixed with chicken for a fuller meal. Although it may appear to have a large amount of ingredients, do not worry you are sure to find the majority in your cabinets! 

This is the perfect food for a party or eating al fresco!


200g Couscous
250ml Hot chicken stock
5 tblsp Olive oil
2 Garlic cloves chopped
1/2 tblsp dried chillies
1 1/2 tsp Cumin
1 tsp Coriander
1 tsp Paprika
2 handfuls of flaked Almonds (toasted)
4 Spring onions (sliced)
400g can Butter beans
Bunch of Coriander


1. Pour the Couscous into a bowl. Add the hot chicken stock. Cover with a tea towel and let set for 10 mins.

2. Mix the oil with the garlic, chilli, cumin, coriander, paprika and salt and pepper.

3.  Cut the onions, toast almonds, drain butter beans and cut coriander.

4. Mix the couscous with a fork to break up. Then add all the ingredients to the bowl and mix.

And it is complete! Enjoy :)

*Remember chopped cooked meat can be added to make this dish more substantial.
