Marinated Chicken Skewers...

So no, this is not baking, but ill admit I enjoy cooking also. In the last few days here in Ireland we have had a heat wave. And it is set to continue all through next week. It is very rare to even see the sun in Ireland so I have no doubt every one will be dusting off the barbeque before the week is out! These Chicken/Turkey skewers are perfect for eating al fresco and can be cooked in an oven or on a barbeque.

This recipe is spicy and perfect for the summer heat. Served with cous cous or a salad it makes the perfect summer meal.

Ingredients:

Marinade
2 tsp Salt
2 tsp Paprika
1/2 tsp Ginger
1/4 tsp Saffron
1/2 tsp Tumeric
2 cloves Garlic (finely chopped)
1 1/2 tblsp Vegetable oil
1 1/2 tblsp Lemon juice
3 tblsp Parsley (chopped)

Other
1 1/2 pounds of Chicken/Turkey 
Courgette
Pineapple
Green Peppers

Method:
  • Add all the ingredients for the marinade in a bowl.

  • Chop the meat into chunks. Places the meat in the bowl and toss to cover in the spices.

  • When all the meat is covered in the marinade, cover the bowl with cling film/tinfoil and place in the fridge for a few hours/overnight.





Assembly:
  1. After a few hours take the meat out and begin to create the skewers. Place a mixture of meat and vegetables on the skewers in no particular order



Now you can cook these in the oven for about 25 minutes or on a barbeque.


Then, Enjoy! Enjoy the heat, the sun and of course these juicy and spicy sticks of meat and vegetables!
